Raw Baking: The best Chocolate Cake

This Raw chocolate cake is not too expensive and definitely easy to make. You can easily make it for the next day or eat it in an hour after freezing. It is not a low calorie cake (coconut oil, almonds and walnuts) but all the ingredients are natural and clean. It is a great dessert to serve for a group of health conscious  people or people who are skeptical for eating Raw foods. This will change their minds.
Chocolate Cake

base:
80g Almonds
20g Walnuts
70g dates
sea or Himalayan salt to taste
Filling:
1 1/2 avocados
70g raw cacao
50g coconut oil
100 g raw honey or raw cane sugar
1 vanilla bean or natural vanilla
pinch of sea or Himalayan salt

Soak the almonds and walnuts for at least 6 hours then drain and dehydrate them. This way they are easier to digest. Add dates and salt and blend until you have a dough. Press the dough into a small cake pan and place in the freezer while you make the filling.
Place all the filling ingredients in a food processor then blend everything until smooth. Pour the filling over the base. Set in the freezer for 1 hour or to the refrigerator for at least 6 hours.

Pohja:
80g manteleita
20g saksanpahkinoita
70g taateleita
ripaus merisuolaa tai himalayansuolaa
Tayte:
1 1/2 avocadoa
70g raakakaakaota
50g kookosoljya
100g raakahunajaa tai ruokokidesokeria
1 vanilijatanko tai vanilijaa maun mukaan
ripaus meri tai himalayansuolaa

Liota manteleita ja saksanpahkinoita vahintaan 6 tuntia ja kuivaa ne. Nain ne ovat helpompi elimistolle sulattaa. Lisaa taatelit ja suola ja blendaa kunnes seoksesta muodostuu taikina. Painele taikina pieneen vuokaan ja laita pakastimeen  taytteen teon ajaksi. 
Laita kaikki tayteainekset tehosekoittimeen ja sekoita kunnes tayte on kokonaan pehmeaa. kaada seos pohjan paalle ja laita kakku pakastimeen tunniksi. Voit myos laittaa kakun jaakaappiin yon yli.

Library of Recipes: Simple Super Salad!

5 Minute Super Salad

This is one of the recipes that you use when you just need to make up something from almost an empty refridgerator. The recipe varies every time, so feel free to change or add ingredients. The main ideas of this salad are dark leafy greens, lemon vinegar dressing, hemp seeds and other seeds or nuts.
 I really love using kale, not only for its nutritional value but also because it tastes delicious. It's crispy and fresh and somehow just so much more than regular lettuce. I know in Finland we don't really have kale (or at least I haven't found it) but its perfectly fine to use romaine lettuce or any other dark leafy greens. I also recommend everybody to start using hemp seeds, since they are an excellent source of protein including all the needed amino acids. They also taste good and the texture is smooth and creamy. You can use them for salads, smoothies, risottos, wraps etc.

ingredients:
Kale
pine nuts
Hemp seeds
carrot
avocado
cucumber
Dressing:
Lemon
olive oil
balsamic vinegar
sea salt
black pepper

Mix lemon juice, olive oil, balsamic vinegar, sea salt and black pepper together in a small cup. Put washed kale on a plate and pour the dressing on it. Add all the other ingredients and ENJOY!

Little Piece of Heaven!!

OMG this Raw Chocolate Mousse is just ridiculously delicious! So far I have only found it from Organic Avenue (Manhattan, New York) but luckily I got one a few blocks from my home door! :) The ingredients in this amazing dessert are so clean and nutritious that I don't feel bad at all after eating a whole thing.

This is definitely something I will try to make myself. 

If you live or visit New York, you should definitely go and check out one of the Organic Avenues..but just a little warning...their desserts will take your breath away!



Ingredients: Raw cacao, dates, coconut oil, agave, avocado, vanilla and sea salt

FOOD HEAVEN PART1

First I want to apologize for neglecting my precious blog and my readers. I have been too busy to even think about writing but now I need to tell you about some amazing restaurants I've found in New York. The list is long, so I'm going to do it in two parts.

1. Pure Food and Wine
54 Irving Place  New York, NY 10003
This restaurant is just fabulous with the inside terrace and  its romantic atmosphere. The menu is all raw, the prices are ok and most importantly the food is CRAZY!!
I came here with Niina and Jenni. I had philly rolls for appetizer and me and Niina had zucchini lasagnas for main course. Jenni had Tacos al Pastor. I can't wait to take my mom to this delicious raw food restaurant- She is going to love it :)

Philly rolls with spinach, avocado, cashew cheese.

2. Caravan of Dreams

Very cute and delicious vegan organic restaurant that offers some raw food dishes too. My salad was amazing and so was Annika's squash spaghetti.

3. Souen- Macrobiotic, Natural organic Food

My friend and coworker Annika took me to this restaurant yesterday. It was hard to choose what to eat since the whole menu looked so delicious. This macrobiotic restaurant offers something for everybody since it is not a vegan restaurant. The prices were surprisingly affordable too.

Kuzu Stew 12 broccoli, cauliflower, nappa, green, carrot, snow pea, shiitake, onion in ginger tamari clear kuzu sauce.

4. The Hummus & Pita Co
585 6th Avenue  Manhattan, NY 10011
This is a fast food restaurant that usually are not my favorite places, but the food was actually fresh and good, and definitely inexpensive. This plate cost about $7.

Hummus with Falafel, Whole Wheat pita, cabbage salad and quinoa.
This last Hummus with Falafel was actually in a small Kosher restaurant in Brooklyn but I have no idea what the name was or even where in Brooklyn we were. unfortunately.

Ok, it's time to go to sleep. I will continue my restaurant experiences as soon as possible! Good night and remember to enjoy good food!
